Outlook will eventually index them for you so they are searchable. Might take some time depending on the size of your mailbox.

so If I'm looking for the term "emphatic emblazened fat turd" that's I sure is in a 200 page word document embedded in a workbook from 2005...

Hmmm....I don't think it indexes the contents of the attachments - just the file names. Hopefully you have the words "fat turd" in the file name.
