If I had to pick one it'd probably be something like a KTM 990 Supermoto. I could do trackdays, commute, it'd be comfortable enough to do some traveling but I don't know how big the tank is. I saw a guy who put a 17 front rim on a GS1150 and did pretty well at JGP on it. I like the older BMW sport/tour bikes too, I don't remember the name right now, it had underseat exhaust.

My 1978 CB750K. its sporty when it needs to be, comfortable ALL DAY with the windshield on it, and its as sure a bet to be there for me as death and taxes. Oh and I just plain love vintage SOHC4 Hondas. they're frikkin undying machines built to last forever.

I had one with a 836 kit in it, 29 smoothbores, rc engineering pipe, ran good
APE Has a 1080 kit for em too...

I've heard of those, but I'd prefer to keep it stock. if I snag up a 2nd one somewhere I may do a big bore kit for entertainment.
